Where did you grow up?
I grew up on a beautiful inland lake in Eastern Michigan, where I swam, water skied, fished and hunted.
When did you know you wanted to be a chef?
I knew I wanted to be a chef when my mother went back to work when I was about 10 or 11. Being the oldest of three children the task came to me, I was very excited to able to use taste, flavour and presentation to create meals for the family that everyone enjoyed eating.
Do you have a favorite memory of food?
My favorite memory of food would either be when my great grandmother would come to visit and she would stand at the stove making crepes one at a time and we would all line up to the next one hot out of the pan. Or when she and my mom would hand knead strudel dough at the kitchen table.
How do you get your inspiration?
My inspiration comes to me seasonally, visually or aromatically.
Do you have a favorite kitchen gadget?
My favorite kitchen gadget would have to be my mandolin.
Funniest kitchen incident?
I’m a practical joker…Made chicken liver pate’ chocolate truffles for the staff on April Fool’s Day.
Do you have a chef that you admire in the food world?
I do not have a favorite chef there are countless great creative chefs in both the past and present.
What is your favorite food or dish to make?
Strudel, apple is the family favorite but savory strudels are also fabulous.
Where is your favorite place in the world?
On the water
What is your last supper meal … the death row meal as Anthony Bourdain puts it.
